Okitasan, ilk birkaç ayını Türk mutfaklarında, Türk damak tadını ve zevkini anlamaya çalışarak geçirdi. Aylarca yaptığı araştırmalarda reçetelerinde kullanabileceği lokal lezzetlerin, sushi'lerinin en önemli unsuru olan sushi pilavının ekşilik oranı gibi detayların peşine düştü.
